Nutrition Assessment Lab (Oct - Dec 2013)
I taught the Nutrition Assessment Lab to 20 students in BYU's Dietetics Program. I worked with the other interns to teach the six labs in which the students practiced doing anthropometric, biochemical, clinical, dietary, and physical and functional assessments. I specifically led the biochemical lab and the practicum. In the practicum, we brought in several "clients" for the students to assess using whichever measures they determined would be best. At the end we did a debriefing with the "clients" and students to evaluate how they did.
